How To Make BBQ Veal With Olive & Tomato Sauce

Step 1: You will need…
- 2 veal steaks weighing 200g
- 2 tbsp olive oil
- 3 tbsp pitted black olives, chopped
- 3 tbsp pitted green olives, chopped
- 1 tomato, deseeded and diced
- 1 clove of garlic, minced
- the zest and juice of 1 lemon
- 2 tbsp parsley, chopped
- 60 ml olive oil
- salt and pepper
- 1 tray
- 1 pair of tongs
- 1 bowl
- 1 spoon
- 1 barbecue, charcoal or gas
- 1 bottle of water for dousing any flames
Step 2: Prepare the barbecue
If you have a charcoal barbecue, light it 30-45 minutes before you plan to cook. If it is a gas barbecue, turn it to its highest setting for 15-20 minutes before cooking.
Step 3: Make the sauce
Into the bowl add the green and black olives, tomato, garlic, lemon zest, lemon juice, parsley and the oil. Season with salt and pepper and mix well.
Step 4: Season the veal
Spoon some oil onto the meat and season with salt and pepper. Turn the steaks over and do the same with the other side.
Step 5: Barbecue the veal
Place the steaks on the barbecue and cook for 3 minutes. Turn the steaks 90 degrees to make a pattern on the meat and cook for another 3 minutes. Turn the veal over and cook for a final 5-7 minutes.
Remove steaks from the barbecue.
Step 7: Serve
Place a steak on the plate, crossed side up. Top with some of the sauce, use a little to decorate the plate and serve.
