3 Delectable Oven Baked Meals

You don’t have to knock yourself over some pots and pans to create a perfect dinner, just throw some veggies and meat in the oven and you are all set for a very luscious meal.

Here are some oven baked meals and recipes you can use:

 

Baked Chicken On A Bed Of Vegetables

Ingredients:

  • Two pounds of chicken thighs and drumsticks
  • One onion, sliced thinly
  • Three cloves of garlic, minced
  • Two carrots, diced
  • Three potatoes, diced
  • One cup of celery, cut into smaller pieces
  • Two tablespoons of balsamic vinegar
  • Two tablespoons of olive oil
  • Two tablespoons of fresh parsley
  • One half teaspoon of thyme
  • One half teaspoon of basil
  • One fourth teaspoon of oregano
  • Salt
  • Pepper

What you need to do:

Preheat the oven to 425 degrees F. Wash the preferred veggies. Cut them appropriately. Make a bed of chicken pieces. Add some vegetables on the bottom part of the baking dish you are going to use. Sprinkle with olive oil. Add the balsamic vinegar, salt, pepper and the dried herbs.

Cover the chicken with olive oil. Then, sprinkle it with the salt and pepper. Place the chicken on top of the vegetables.

Put it inside the oven. Bake it for an hour until the chicken is done. Mix the vegetables in the baking dish. Roast for another five minutes. Garnish with parsley or other greens, if you want.

 

Shrimp and Roasted Broccoli

A delicious twist of shrimp and broccoli, it will surely tickle your taste buds. Broccoli is a healthy vegetable that is rich in vitamins and minerals essential to your body.

Ingredients:

  • Two pounds of broccoli, cut into small florets
  • Four tablespoons of virgin coconut oil
  • One teaspoon of whole caraway seeds
  • One teaspoon of whole cumin seeds
  • One pound large shrimp, remove the shell and deveined
  • One large lemon juice and zest extracted
  • One teaspoon of salt
  • One teaspoon of black pepper
  • One half teaspoon of chili powder

What you need to do:

Preheat the oven to 425 degrees.

In a bowl, place the broccoli and pour the two tablespoonfuls of coconut oil, cumin, caraway seeds, salt, pepper and chili powder.

In another bowl, combine the shrimp, the two tablespoons of coconut oil lemon zest, salt and pepper.

On a baking sheet, spread some broccoli in one single layer. Let it roast for ten minutes. Add the shrimp to the baking sheet and toss with broccoli. Roast again. Toss it once a halfway through until the shrimps are done. Make sure that the broccoli is tender and golden around the edge. It usually takes ten minutes. Serve it with lemon wedges and squeeze some lemon juice if you want.

Roasted Tomatoes And Eggs

This recipe is perfect for breakfast. Whip this one up and enjoy your sunny side up a little differently.

Ingredients:

  • Six large tomatoes, sliced
  • Six large eggs
  • Two tablespoons of olive oil
  • One tablespoon fresh basil leaves
  • Salt
  • Pepper

What you need to do:

Heat the oven to 400 degrees. Slice about one third of the tomatoes and removes the seed and the middle part. Place it in a baking dish. Spread the oil and season with salt and pepper evenly. Add the thyme. Roast the tomatoes for thirty minutes. Put the egg on each tomato and add some salt and pepper. Bake for five to ten minutes. Serve and enjoy!
