Valentine’s Day Desserts For Your Love

Looking for a way to woo your loved one’s heart this Valentine’s Day? Instead of buying chocolate and roses, why not make a homemade dessert, served by candlelight? If you’re looking for some elegant yet easy desserts that your significant other is sure to love, consider some of these delectable desserts.

 

1.) Oreo Truffles

Nothing says “I love you” like homemade candy! Chocolate truffles are hard to beat, but this recipe shines because the candies are coated with a peanut butter shell. If you’re looking for a tasty variation, spread the truffle mixture over brownies for a delicious alternative. Regardless of how you choose to make this recipe, it’s sure to satisfy your loved one’s sweet tooth!

Ingredients:

15 Oreo cookies

2 ounces cream cheese, softened

8 ounces almond bak

2 tablespoons creamy peanut butter

Instructions:

1.) Place Oreos and cream cheese in a food processor. Pulse until the mixture comes together (1-2 minutes).

2.) Scoop 1 tablespoon sized balls and place them on a wax paper lined cookie sheet. Chill while you prepare your candy.

3.) Melt almond bark according to package directions. Halfway through melting, add the peanut butter to the bowl. Stir often, until smooth.

4.) Dip each truffle in the candy and tap off the excess. Use a toothpick to carefully transfer the truffle from the fork back to the cookie sheet. Repeat with all the truffles.

5.) If desired, you can re-dip each truffle so that the dark Oreo inside doesn’t show through the light peanut butter outside.

6.) Chill until set.

 

2.) Raspberry Napoleons

If your significant other adores light, fruity desserts, this simple recipe will be perfect for them! The heart-shaped puff pastry will make it look like you fussed, but the recipe couldn’t be simpler to make! With only four ingredients, it’s a tasty recipe that won’t cause you to spend all day in the kitchen. I sometimes substitute strawberries for the raspberries. It’s also a perfect dessert to make year round. You can make it any shape you want, depending on the season.

Ingredients:

½ pound puff pastry, thawed

2 cups cool whip

½ pint fresh raspberries

Confectioners’ sugar

Instructions:

1.) Preheat oven to 425 degrees.

2.) Place puff pastry on a parchment paper-lined baking sheet and poke holes all over surface using the tines of a fork; top with a second piece of parchment paper. Place 2 baking sheets on top of parchment paper to weigh down; transfer to oven. Bake until golden brown, 20 to 25 minutes.

3.) Remove puff pastry from oven and uncover; let cool completely. Using a 3 1/4-inch heart-shaped cookie cutter, cut six hearts from puff pastry, reserving scraps.

4.) Fill a pastry bag fitted with a 1/2-inch plain round tip with cool whip. Place 1 heart-shaped piece of puff on each of two dessert plates. Pipe cool whip over the surface of each heart, almost to the edge. Place raspberries around the perimeter of the cool whip. Top each with a second puff pastry heart and repeat process. Top each with a third puff pastry heart.

5.) Crumble a little of the reserved puff pastry scraps and top Napoleons with crumbs. Dust tops with confectioners’ sugar and pipe a little cool whip in the center of each. Top with a raspberry and serve immediately.

 

3.) Strawberry Parfaits

Strawberry Parfaits by ume-y

I found a similar recipe in my favorite cooking magazine, and it’s now a year-round favorite with my family. I make a point to serve it during the summer when strawberries are in season, and on Valentine’s Day for a sweet, fluffy parfait treat. Sometimes I use brownie cubes instead of angel food cake. Other times, I layer an entire cubed angel food cake with berries to create a trifle. Regardless of what I do, this is one recipe that never fails to impress!

Ingredients:

2 slices angel food cake (cut into 1-inch cubes)

3/4 cup raspberries

3/4 cup strawberries

4 ozs vanilla pudding (prepared)

1/4 cup cool whip

Instructions:

1.) In a small mixing bowl, gently fold together the vanilla pudding and whipped topping.

2.) Using 2 parfait or sundae glasses, place one-fourth of the cake cubes in the bottom of each glass. Add one-fourth of the berries and one-fourth of the pudding mixture. Repeat the layers. Serve immediately.
