FroYo berry bites are like hardened parfaits. The best part is, you don’t even need to bake them. To make them, you need:

¼ cup almond meal
1 ½ cups fresh berries
2 tbsp honey
¾ cups plain Greek yogurt
2 tbsp coconut sugar
2 tbsp coconut oil
Muffin pan liners

Place liners in every slot of a muffin tin before you begin. In a small bowl, mix together the almond meal, melted coconut oil, and coconut sugar. Add a spoonful of almond meal to the  bottom of each cupcake liner. Next, stir together yogurt and honey in another bowl. Put about two tablespoons of yogurt on top of each so the bottom is completely covered. Next, top the yogurt with fresh berries. Raspberries, blueberries, and diced strawberries work well. Put the pan into the freezer and freeze until the snacks are firm. This should take about 5 or 6 hours.

Strawberry oatmeal bars are healthy and they taste amazing. To make these, you need:

1 cup old fashioned rolled oats
¾ cups whole wheat flour
14 cup ground ginger
1/3 cup light brown sugar
1 tsp cornstarch
1 tbsp lemon juice
1tbsp granulated sugar
2 cups diced strawberries
6 tbsp unsalted butter, melted
¼ tsp salt

If you want a sweeter oatmeal bar, you can make a homemade vanilla glaze. All you need is:

½ cup powdered sugar
½ tsp vanilla extract
1 tbsp
Milk

To make the oatmeal bars, preheat your oven to 375 degrees Fahrenheit with your top rack in the center of the oven. Line a baking dish with parchment paper so the paper sticks a few inches over the sides. This way  you can lift the bars out when they’re finished.

In a medium bowl, mix together the oats, ¾ cups of flour, ginger, brown sugar, and salt. Once it’s all combined, add the melted butter and stir together. All of the dry ingredients should be moist and the whole mixture should be clumpy. Take out a ½ cup of the mixture and set it aside, press the rest of it firmly into the pan. Scatter half of the chopped strawberries over the mixture in the pan. Sprinkle the cornstarch evenly over the strawberries, then add lemon juice, and ½ a tablespoon of white sugar. Next, scatter the rest of the berries, and then the rest of the sugar. Take the ½ cup of mixture you set aside and sprinkle the rest over top. Bake in the oven for 35 to 40 minutes until the topping is light golden brown. Set the pan on a wire rack or in the refrigerator to cool. While the bars cool, you can make the icing if you want it. All you need to do is whisk all of the ingredients for the icing together. Once the bars are cool, drizzle it over the top with a piping bag or a spoon. Cut the finished product into bars and serve.

These snacks are easy and delicious. The fruit will curb your sweet tooth and you’ll feel good that you made healthy choices.
