As a foodie I know that I’m always trying new things and working to make quality food for myself and any guests I may have.  Recently I had a chance to try out Minute® Rice and I jumped at the chance because I was curious to see just how flexible and convenient it could be.  I let my friend know I was going to the event and her face was less than pleased… her reaction let me know that I really needed to try it out and share with you all how tasty, easy to use and versatile Minute® Rice can be for any meal.

For this event we had a lovely chef prepare a variety of meals made from Minute® Rice, you can see the menu below.  What surprised me is that he was able to make something for every meal of the day; Breakfast, Lunch, Dinner and Dessert.

Below you can see that Minute® Rice comes in many styles from Basmati or Jasmine to Brown rice there’s something that is sure to please the whole family.

Check out a small taste of what you can make with Minute® Rice in your kitchen. For a Breakfast or Brunch ready meal we have the Skillet Rice with Eggs, Ham, Mushroom, Cheese and Herbs… it was truly delicious and I could see myself eating it any time of day.

For a great Lunch or Dinner you could try this Greek Sala on a Crunchy Rice Cake. I honestly never thought to make a rice cake in this manner but it definitely has my creative juices flowing. We also did a bit of a Minute® Rice Iron Chef, my team was Team Chicken, while we loses… our food was still awesome! LOL

And last but not least for Dessert we enjoyed this yummy Apple Rice Tart. Who says you can’t make more than rice pudding with rice?

How You Can Spruce Up Breakfast, Lunch, Dinner and More With Minute® Rice!

What You’ll Need:
1 Tablespoon and 1-1/2 teaspoons cornstarch
3/4 cup chicken stock
1-1/2 teaspoons soy sauce
1 Tablespoon vegetable oil

1/2 lb. fresh or thawed frozen medium shrimp, peeled and deveined

1/2 red bell pepper, sliced into thin strips (frozen or fresh)

1/2 yellow bell pepper

1/4 cup of frozen peas and carrots

1/2 onion sliced

1/2 teaspoon brown sugar
1/4 teaspoon ground ginger
1/8 teaspoon garlic powder

1/8 teaspoon cayenne pepper
1/2 cup hot cooked Minute® Rice Brown Rice or White rice

How To Make It:

Combine shrimp, ginger, cayenne pepper, garlic and black pepper in a plastic food storage bag or bowl. Allow to marinate in the refrigerator for at least 30 minutes.

Next, Stir the cornstarch, stock, soy sauce and sugar in a small bowl until the mixture is smooth.

Heat 1 tablespoon vegetable oil in a 12-inch skillet over medium-high heat. Add the peppers and onions. Sauté till softened then add mixed veggies and seasoned shrimp. Sauté until shrimp are opaque.

In a medium saucepan, bring salted water to a boil. Add Minute® Rice, reduce heat, cover and simmer for 5 minutes. Remove from heat and then  stir; cover. Let stand 5 minutes or until water is absorbed and then fluff with fork.

Stir the cornstarch mixture in the skillet. Cook and stir until the mixture boils and thickens. Serve over the rice.
