A Quick and Easy Recipe For Meal Time Success: Brown Rice and Beans with Baked Tilapia

I know with the new year upon us and many of you doing weight loss resolutions, I wanted to provide an easy meal that usually fits into a great meal prep schedule. Brown Rice and Beans with Baked Tilapia. This time I used Success® Whole Grain Brown Rice which is super convenient, it can be made on the stove or in your microwave… all without sacrificing great taste or quality. Since we did the last recipe on the stove, this time I made the Success® Whole Grain Brown Rice in the microwave just to show you how well it can turn out. What’s great is the white and brown Success® Rice can sit for up to 30 minutes before being served, which makes it pretty foolproof. And allows you to get your meal prepped for yourself or your family. Speaking of family, to accommodate various households, Success® Whole Grain Brown Rice and Success®White Rice comes in two different sizes – 14 oz. or 32 oz. So there’s plenty for everyone to enjoy.
Brown Rice and Beans with Baked Tilapia
Ingredients:
1 can Black Beans
12 oz bag of 3 Pepper and Onion Blend (found in frozen food section)
1 bag of Success® Whole Grain Brown Rice
1 T butter
Paprika
Salt
Black Pepper
Step 1:
Pre-heat oven to 425º F and then season your thawed tilapia filet with melted butter, salt, black pepper and paprika. Amount varies by your preference.
Step 2:
Place seasoned tilapia in oven to bake on foil or prepared baking sheet. Bake for 9-11 minutes.
Step 3:
After you put your tilapia in the oven. You can now get your rice going in the microwave. Just follow the directions on the box, rice will be done in 10 minutes.
Step 4:
Open and then drain canned beans rinse them and then add the to a sauce pan. Pour in 3 Pepper and Onion Blend and add salt and pepper for taste. Cover the pot and let it cook on medium-high heat for about 10 minutes. Once it’s finished drain it.
Step 5:
Serve your tilapia and rice with beans/pepper mixture on top and ENJOY!
